
A 40-month São Jorge PDO cheese is now on the market in a limited edition. This is the first time a cheese from São Jorge has matured for a long time. Chef Alexandre Silva is taking part in the initiative.
“This is a real delicacy for cheese lovers, made even more unique by the limited time it can be sold,” says a note from LactAçores, the entity that distributes the cheese produced in São Jorge.
“We believe that it will be cherished by the end consumer, who now has the opportunity to taste a cheese with a lot of tradition and a unique flavor, which is suitable for the Portuguese table, especially in the upcoming festive season,” according to Nuno Ferreira, Commercial and Marketing Director of LactAçores.
Queijo São Jorge DOP 40 Meses is on sale on the Portuguese mainland for forty euros a kilo and allows consumers “to have access to a long-aged cheese, distinctive in its taste, a true relic for cheese lovers,” says José Carlos Serrão, general director of LactAçores.

FIVE CURATIONS
Queijo São Jorge PDO (Protected Designation of Origin) is now available in five different maturations, ranging from four to 40 months and seven, 12, and 24 months, each with its own flavor.
“For the most demanding, this longer ageing gives São Jorge cheese an even more intense aroma and a spicy flavor with an elegant finish, with a balanced profile, produced exclusively with natural ingredients,” says LactAçores.
“From generation to generation, dedication and daily work have made it possible to preserve this charismatic product from the island of São Jorge, unique in the world, created with milk with distinct characteristics that only the pastures of São Jorge Island can offer,” said António Aguiar, Chairman of the Board of Directors of Uniqueijo.
